Recipe – Orzo Pasta Salad

Mom and dad, it’s time to put spaghetti on the shelf and try a new kind of pasta. Orzo – short-cut pasta made to look like large grains of rice – is the star of this vibrant Italian pasta salad. If Italian food isn’t your style, try switching out the vegetables and the kind of cheese to something you like better. To turn this side dish into a main dish, add a simple protein like a can of tuna fish to the mix.
You Will Need…
1 box orzo
1 8 oz. carton grape tomatoes
1 can black olives, sliced
2 oz. feta cheese
¼ cup balsamic vinegar
¼ cup olive oil
Make 1/3 of the box of orzo according to the instructions on the package. Cut 4 oz. (half the carton) of tomatoes into halves. Drain the olives. Once the pasta is done and drained, add the tomatoes, olives and cheese. Stir in the oil and vinegar. Chill and serve.
