Cool food for hot days

The popular saying goes “if you can’t take the heat, get out of the kitchen.” But who ever said kitchens have to be hot? Escape the sticky Summerville heat in your kitchen this summer using these best-served-cold recipes the whole family will enjoy.
Snack – Fruit Salsa and Cinnamon Chips
The snack lovers and sugar hounds in your household will love this seasonal play on chips and salsa. To make this a family favorite all year ‘round, switch out the ingredients to suit what’s in season and add more quantities of the fruits your family can’t get enough of.
You Will Need…
2 kiwi
1 16 oz. carton of strawberries, diced
1 8 oz. carton of blueberries
1 8 oz. carton of raspberries
1 Granny Smith or Golden Delicious apple, cored and diced
2 tablespoons preserves, any berry flavor
flour tortillas, 10 in.
butter-flavored cooking spray
˝ cup sugar
1 tablespoon cinnamon
Clean, dice when needed, and combine all the fruit into a serving bowl. Add the preserves. Stir the mixture until thoroughly combined. Chill until ready to serve.
Preheat the oven to 350 degrees. Place tortillas on a cookie sheet and spray with cooking spray. In a small bowl, combine ˝ cup sugar and 1 tablespoon cinnamon. Sprinkle cinnamon sugar onto the tortillas to taste. Cut tortillas into wedges and bake for 10 minutes or until crisp and firm. Cool and serve.
