For the kids, we’re making “sushi.” This recipe is heavy on the vegetables, but if you’re searching for a heartier meal for your kids, add chicken, ham or cheese to the mix. It can also be made to suit your child’s sweet tooth by switching the spinach tortilla for a flour one, hummus for whipped cream cheese (it will spread easier), and vegetables for fruits.
You Will Need…
spinach tortillas, 10 in.
hummus, any flavor
1 red bell pepper
Cut the tortilla into the largest rectangular shape possible. (Note: this step is not essential, but will make the rolling process easier.) Apply a layer of hummus to one side of the tortilla. Slice the pepper and cucumber into long, thin strips. Place a few strips of peppers, cucumbers and carrots in a line down the middle of the tortilla, length-wise. Fold one side of the tortilla around the vegetables and continue with a rolling motion until complete. Cut into six pieces using a serrated knife and serve on ends, like sushi.
