Business has picked up steadily in the two months since Madres Mexican Restaurant opened its doors at 1001 Bacons Bridge Rd Unit C.
The restaurant’s strong start is the result of a friendly staff, welcoming atmosphere and authentic Mexican food prepared by sisters Mariana Godinez LaRoche and Karen Godinez Butler.
LaRoche and her three sisters grew up making meals from Godinez’ family recipes- courtesy of their mother’s Guanajuato heritage. LaRoche worked much of her life in the restaurant industry, putting herself through college by working as a caterer or a server.
On a leap of faith, she left her successful career in accounting to open up the family’s first restaurant.
“It was always in the back of my mind to open a restaurant because that was my mom’s dream as well as ours,” LaRoche said.
Butler joined her sister in opening Madres. LaRoche said she hopes her two remaining sisters and parents will eventually take part in running the family business.
Madres stands out among other Mexican restaurants because of its vegetarian and vegan meals.
LaRoche said she wanted to keep the meals authentic but also healthy.
“Our rice is one example,” LaRoche said. “It is typically made with chicken broth but we just do a garlic/onion based rice to give it more flavor but also include everybody.”
In most Mexican recipes, beans are made with lard or bacon grease but the Godinez recipes use vegetable oil or olive oil.
Madres’ Mexican is open 11 a.m.-9 p.m. Monday-Thursday and 11 a.m.-10 p.m. Friday-Saturday. To learn more about the restaurant, call 843-900-5425 or visit madresmx.com.
